  1. 1 Pure water

  2. 1/4 cup 59ml Salt

  3. 2 tablespoons 30ml Brown sugar

  4. 2 tablespoons 30ml Liquid hickory seasoning/smoke

  5. 1/4 teaspoon 1 1/3ml Allspice

  6. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  7. 4 Salmon, halibut or cod steaks or fillets - (4 to 6 oz ea)

  1. Dissolve salt and brown sugar in water. Stir in hickory seasoning, allspice and pepper. Pour this mixture into a large heavy-duty zip-lock bag or into a shallow non-corrosive dish. Add seafood and turn to coat. Marinate covered, if needed, in refrigerator for one hour.

  2. Remove from marinade and drain thoroughly. Brush seafood with oil and place on hot grill. Cook, turning once, about 6 to 12 minutes per inch of thickness. Do not overcook.

  3. This recipe yields 4 servings.
