  1. 1 lb 454g / 16oz Navy beans - dried

  2. 2 Onions; small - chopped

  3. 8 cups 1896ml Water

  4. 1 teaspoon 5ml Salt

  5. 3 cups 711ml Beef broth

  6. 1/4 teaspoon 1 1/3ml Pepper - white

  7. 1 Carrot - chopped

  8. 6 Frankfurters - sliced

  9. 1 Celery stalk - chopped

  10. 2 tablespoons 30ml Parsley - chopped

  11. 4 Bacon; strips - cubed

  1. * Note: Use the real Frankfurters in this recipe and not the hot dogs!

  2. Soak beans overnight. In a 3-quart saucepan bring beans, water and beef froth to a boil. Cook for about 1 hour. Add carrot and celery and continue cooking for 30 minutes.

  3. In a separate frying pan cook the bacon until transparent. Add the onions; cook until golden. Set aside.

  4. Mash soup through a sieve or food mill. Return to pan and add the bacon onion mixture, salt and pepper. Add frankfurters; reheat about 5 minutes. Sprinkle soup with chopped parsley and serve.
