  1. 2 cups 186g / 6.6oz Diced fresh coconut

  2. 2 to 3 fresh coconuts

  3. 1 1/2 tablespoons 22ml Grated fresh ginger

  4. 1 lb 454g / 16oz Light brown sugar

  5. 1 teaspoon 5ml Vanilla extract

  6. 1 Kosher salt

  7. 1/2 cup 118ml Water - (to 3/4)

  1. Put all the ingredients into a heavy-bottom saucepan, with just enough water so the coconut will cook. Boil the mixture until it becomes very sticky, about 20 to 30 minutes.

  2. Remove from heat, and beat with a wooden spoon for a few minutes. Then drop by the spoonful onto a greased or parchment lined baking sheet to cool, about 30 minutes.

  3. This recipe yields about 12 drops.
