  1. Chicken:

  2. 4 boneless, skinless chicken breasts

  3. 2 tablespoons Cajun seasoning

  4. 1 tablespoon butter

  5. 1 tablespoon olive oil

  6. Sweet & Sour Sauce:

  7. 3/4 cup orange juice

  8. 2 tablespoons lemon juice

  9. 1/2 teaspoon sesame oil

  10. 1 tablespoon sugar

  11. 1/2 teaspoon allspice

  12. 2 tablespoons water

  13. 1 tablespoon cornstarch

  14. 2 cups saffron rice, cooked

  1. Sprinkle each chicken breast with Cajun seasoning. In large nonstick skillet, heat butter and olive oil over medium heat. Add chicken and sautÈ, turning, about 12 minutes or until chicken is golden brown and fork can be inserted with ease.

  2. Meanwhile, prepare Sweet and Sour Sauce: In small saucepan, mix together orange juice, lemon juice, sesame oil, sugar and allspice. Bring to a boil over medium heat. In small bowl, mix until smooth, water and cornstarch. Add to saucepan and cook until mixture has slightly thickened.

  3. Remove chicken from skillet and cut into 1/2-inch strips. To serve, place rice on plate, top with chicken strips and serve with Sweet and Sour Sauce.
