  1. 200g (7 oz) red lentils

  2. 1 good knob ginger, grated

  3. 1/4 teaspoon ground turmeric

  4. 1 teaspoon salt

  5. 1/2 teaspoon cayenne pepper, or to taste

  6. 2 dessertspoons olive oil

  7. 2 dessertspoons minced onion

  8. 1 teaspoon cumin seeds

  1. Rinse lentils thoroughly and place in a medium saucepan along with remaining ingredients. Cover with water and bring to the boil. Skim off any foam that forms on top of the lentils. Reduce heat and simmer, stirring occasionally, until lentils are tender and soupy.
