  1. 1 1/4 cup(s) vegetable broth

  2. 1 teaspoon(s) minced garlic

  3. 1 cup(s) tomato couscous

  4. 1 tablespoon(s) fresh thyme leaves

  5. 3 plum tomatoes , seeded and diced

  6. 5 cup(s) chopped parsley

  7. 3 scallions , chopped

  8. 25 cup(s) toasted pine nuts

  9. 3 tablespoon(s) extra virgin olive oil

  10. 3 tablespoon(s) red wine vinegar

  11. 1 1/2 teaspoon(s) kosher salt

  12. Freshly ground black pepper

  1. Bring broth and garlic to a full boil in a medium saucepan; stir in couscous and thyme. Remove from heat and cover. Let stand 5 minutes, until broth is absorbed. Uncover bowl, fluff couscous with fork, and cool completely.

  2. In a large serving bowl, combine cooled couscous with remaining ingredients.
