  1. 2/3 cup chopped, pitted, Kalamata olives

  2. 1/3 cup chopped roasted red peppers

  3. 3 tablespoons olive oil

  4. 2 tablespoons chopped fresh parsley

  5. 1 teaspoon red wine vinegar

  6. 1 garlic clove, minced Keebler Toasteds Buttercrisp crackers

  7. 8 ounces smoked Gouda cheese, thinly sliced

  1. In small bowl stir together olives, peppers, oil, parsley, vinegar and garlic. Let stand at room temperature for 1 hour to blend flavors.

  2. Top crackers with cheese and olive mixture.
