  1. Creamy Rice and Greens Casserole

  2. 10 1/2-ounce package silken firm tofu

  3. pinch turmeric

  4. Salt and pepper to taste

  5. 1 1/4 cups vegetable broth

  6. 2 tablespoons teriyaki sauce

  7. 1 pound greens, rinsed and finely chopped

  8. 3 cups cooked rice

  9. Coat a 2-quart casserole with vegetable cooking spray. Set aside.

  10. Preheat oven to 400 degrees. In food processor or blender, process

  11. tofu, turmeric, salt and pepper, if desired, broth, and teriyaki

  12. sauce until smooth. In large bowl, combine tofu mixture, greens,

  13. and rice. Spoon into greased casserole. Bake at 400 degrees about 30 minutes or until top is lightly browned. Makes

  14. 4 servings.
