  5. 1 Cake (1/4 lb) tofu

  6. 1 medium (4" long) ripe avocado

  7. 2 Hard cooked eggs

  8. Dijon mustard 1/2

  9. ts

  10. Prepared horseradish 1/2

  11. c

  12. Very finely minced red onion

  1. From "The Enchanted Broccoli Forest" By Molle Katzen. salt to taste pepper to taste Place vinegar, water, tofu and avocado in the jar of a blender - or a food processor fitted with the steel blade attachment.

  2. Puree until smooth.

  3. Transfer to a bowl.

  4. Coarsely grate or finely chop the hard-cooked eggs.

  5. Stir these, plus all remaining ingredients into the puree.

  6. Cover tightly and chill.
