  1. 1 lb. pork tenderloin

  2. 3 Tbsp. flour

  3. salt and pepper to taste

  4. 1 Tbsp. oil

  5. 3/4 cup orange juice

  6. 1 tsp. horseradish

  7. 2 Tbsp. lemon juice

  8. 2 Tbsp. cornstarch

  9. 11 oz. can mandarin oranges, drained

  1. Cut pork into 8 pieces crosswise. Flatten between sheets of waxed paper. Mix flour, salt and pepper in shallow dish. Coat pork in flour mixture.

  2. Heat oil in heavy skillet and add pork. Cook pork for 1-2 minutes on each side to brown. Meanwhile, mix remaining ingredients except mandarin oranges in small bowl and add to pork in skillet. Cook 3-4 minutes, stirring frequently, until sauce thickens. Add oranges; heat through and serve over hot cooked rice, if desired.
