  7. - peeled and roughly diced

  8. 3 tb Unsalted butter

  9. 4 c Corn kernels, cooked or raw

  10. 3 c All-purpose broth

  11. -or low-sodium chicken broth

  12. 1/2 ts Salt

  13. 1/4 ts Ground mace or nutmeg

  14. Freshly ground pepper

  15. 4 c Milk and/or cream

  16. 1/2 ts Chopped fresh rosemary -- -OR-

  17. 1 pn -Dried rosemary

  18. This soup is a favorite at Trumps restaurant in Los

  19. Angeles.

  20. COMBINE ONIONS AND BUTTER in a 2-quart pot over medium

  21. heat on the stove. Cook, stirring occasionally, until

  22. the onions are soft, about 10 minutes. Add the corn

  23. and continue to cook, stirring occasionally, another

  24. 8-to-

  25. 10 minutes. Add the broth, salt, mace and pepper.

  26. Cover, increase heat to high and cook for 20 minutes.

  27. Place soup in a food processor and puree until smooth.

  28. Replace the soup in a pot on the stove over medium

  29. heat and add rosemary leaves, milk and cream. Cover

  30. and bring to a boil. Reduce heat to low and cook 5

  31. minutes. Serve piping hot.
