  1. 2 c Unbleached All Purpose Flour

  2. 3/4 c Sugar

  3. 1/2 c Almonds, finely ground

  4. 1/2 ts Baking powder

  5. 1/2 ts Baking soda

  6. 1 tb Grated Lemon Peel

  7. 3 tb Poppy Seeds

  8. 1 Egg

  9. 2 Egg Whites

  10. 1 t Lemon extract Preheat oven to

  11. 350. Grease and flour (or use parchment paper), a large cookie sheet. Mix dry ingredients. Combine wet ingredients and mix with dry ingredients to form

  12. 2-15 inch logs. Bake

  13. 30 minutes. Cool slightly and cut diagonally in

  14. 1/2 inch slices. Bake

  15. 8-10 minutes more til dry. Cool completely before storing in an airtight container.
