  1. Caramelized Custard:

  2. 8 T sugar

  3. 8 T water

  4. 10 oz (330 g) tofu, coarsely crumbled

  5. 3 eggs

  6. 1/2 c sugar

  7. 1 tsp vanilla extract

  8. 2 c milk

  9. 1T cornstarch

  10. oil

  11. 190C. Prepare a baking dish which holds

  12. 1 1/4 quarts (1 1/5 l) by coating with oil.

  13. Combine the sugar and water in a small saucepan. Bring to a boil,

  14. then reduce heat to low and cook until the syrup becomes golden

  15. brown. Quickly pour it into the baking dish, tilting the dish so

  16. that the whole bottom surface is coated. Set aside.

  17. Combine all the other ingredients in a blender or mixer, and blend

  18. until smooth. Pour into the baking dish.

  19. Pour hot water into a pan until it is half full, and set the custard

  20. 40 minutes at

  21. 375 F or 190 C.

  22. Let cool, then unmold onto a serving dish.
