  1. 2 1/2 cups all-purpose flour

  2. 1 1/2 cups sugar

  3. 2 teaspoons pumpkin pie spice

  4. 1 teaspoon cinnamon

  5. 1 teaspoon baking soda

  6. 1 teaspoon baking powder

  7. 1/2 teaspoon salt

  8. 2 eggs , lightly beaten

  9. 1 1/2 cups pumpkin puree

  10. 1/2 cup applesauce

  11. 1/4 cup vegetable oil

  12. 1 cup dried cranberries (such as Craisins®)

  1. In a large bowl, combine first seven ingredients.

  2. In a separate bowl, combine eggs, pumpkin, applesauce, and oil.

  3. Stir into dry ingredients just until moistened. Fold in dried cranberries.

  4. Fill 24 greased muffin cups three-fourths full.

  5. Bake at 350 degrees F for 20-25 minutes or until muffins test done.

  6. Cool in pan 10 minutes before removing to a wire rack.
