  1. 1 pound string bean s*

  2. 1 medium potato , peeled and quartered

  3. 2 tablespoons olive oil

  4. 2 quarts water

  5. salt and white pepper, to taste

  1. Clean fresh string beans, breaking off both ends of beans. Rinse in cold water.

  2. Add string beans to salted, boiling water and cook for 15-20 minutes. If using frozen beans, cook 5-8 minutes.

  3. In another pot, add potatoes to cold water. Bring to a boil and cook until tender, 15-20 minutes. Combine string beans and potatoes. Add olive oil, then stir well.

  4. One-pot recipe:

  5. Cook potatoes for 10 minutes, then add string beans and cook together an additional 10 minutes.

  6. * Use fresh string beans or one 10 oz. package of cut or whole frozen string beans.
