  1. 1 Onion - chopped (large)

  2. 1/4 cup 59ml Corn oil

  3. 1 tablespoon 15ml Tamari sauce

  4. 1 Ripe tomato - peeled and diced

  5. 4 cups 948ml Vegetable stock

  6. 4 cups 948ml Pureed or diced pumpkin

  7. 1 tablespoon 15ml Maple syrup

  8. 1 Broccoli - steamed, and 1/2 cup 118ml Heavy cream

  9. Salt - to taste

  10. Freshly-ground black pepper - to taste

  1. In a large pot, cook the onion in the oil until it is translucent. Add the tamari sauce, tomato, stock, pumpkin, and maple syrup and combine well. Simmer for 30 minutes.

  2. Add the broccoli and cream and simmer another 10 to 15 minutes. Adjust the seasoning, adding salt and pepper to taste.

  3. This recipe yields 4 to 6 servings.
