  2. 4 ounces cheddar cheese -- shredded

  3. 4 ounces monterey jack cheese -- shredded

  4. 1 red pepper -- chopped

  5. 1 green pepper -- chopped

  6. 3 green onions -- chopped

  7. 2 tablespoons cilantro -- snipped

  8. 1 chicken breast -- cooked

  9. and chopped 8 flour tortillas -- (6-inch)

  10. sour cream

  11. fresh tomato salsa

  1. Combine cheeses, red and green peppers, green onions, cilantro and chicken in a large mixing bowl. Place four of the tortillas on an ungreased baking sheet. Spread about 1cup chicken mixture evenly over each tortilla. Top with remaining tortillas and press together lightly.

  2. Bake in a 375F oven for 12 to 15 minutes or until tortillas are golden brown and cheese is melted. Cut into quarters to serve. Serve with sour cream and Fresh Tomato Salsa. Makes 8 servings.
