  2. MARK'S FRIED RICE

  6. 4 c Cooked rice

  7. 1 lg Onion, finely chopped

  8. 2 Garlic cloves, minced

  9. 1 lg Carrot, scrubbed & diced

  10. 1 md Green pepper, diced

  11. 1/2 c Frozen corn &/or peas

  12. 1 3 piece ginger, sliced

  13. 1/2 ts Chili pieces

  14. Soy sauce

  15. Salt & pepper, to taste

  16. Ensure that the rice has been cooked ahead of time &

  17. is well cooled.

  18. 2 to 3 tb vegetable oil in a wok. When

  19. hot, add onions & garlic & fry for 3 minutes. Add the

  20. carrots & stir-fry for 2 minutes. Add the rest of the

  21. vegetables & continue to stir-fry for 2 or 3 minutes.

  22. Toss in the chili pieces & ginger root. Cook for a

  23. few seconds. Carefully stir in the cold rice. Lower

  24. heat & continue to cook, stirring occasionally for 5

  25. minutes. Add enough soy sauce to coat the rice & cook

  26. for a further 5 minutes on low heat, stirring often to

  27. prevent sticking. Season if desired with salt &

  28. pepper. Serve when heated through.

  29. This goes great with spicy tofu dishes or works well

  30. on its own as a main dish in its own right.

  31. If you desire something hotter, add more chili pieces.

  32. Use pieces rather than powder because they are hotter.

  33. For a variation, I sometimes toss in a few strips of

  34. tofu just before adding the spices.
