  1. 1 rotisserie chicken (or 4 chicken breasts)

  2. 12 medium flour tortillas Filling:

  3. 8 oz. cottage cheese

  4. 8 oz. sour cream

  5. 1/2 cup diced mild green chilies

  6. 1/4 cup green onion s

  7. 1 1/2 cups shredded cheddar and jack cheese

  8. 1/2 tsp. cumin

  9. 1/2 tsp. garlic powder

  10. 1/2 tsp. onion powder

  11. 1/2 tsp. salt

  12. tsp. pepper Topping:

  13. 2 cans cream of mushroom soup

  14. 8 oz. mild enchilada sauce

  1. Mix all ingredients in the filling. Add shredded chicken.

  2. Mix together cream of mushroom soup and enchilada sauce. Pour half of mixture on the bottom of a 9“x13” pan.

  3. Assemble enchiladas and line them together in the pan. Cover with remaining sauce. Sprinkle with cheese, olives and green onions.

  4. Bake at 350°F for 30 to 45 minutes.
