  2. 1/2 cup curry paste

  3. 2 tablespoons coconut milk

  4. 2 tablespoons fresh lime juice

  5. 2 tablespoons fish sauce

  6. 1/2 pound rock shrimp -- rinsed and drained

  7. 1/2 pound Shanghai egg noodles -- blanched

  8. 1 cup chopped garlic chives

  9. 1 cup bean sprouts

  10. 1 red bell pepper -- julienne

  11. 2 heads bok choy -- julienne

  12. 1 cup snow peas or snap peas -- blanched

  1. In a hot wok, add curry paste, coconut milk, juice and fish sauce and mix well. Add shrimp and quickly cook, about 1 minute.

  2. Add noodles, chives and vegetables and mix well, being careful not to over mix. Check for seasoning and serve hot.
