  7. CRUST--

  8. 3 c Self-rising cake flour

  9. 3/4 c Unsalted butter

  10. 1 1/4 c Buttermilk

  11. --FILLING--

  12. 3 1/2 lb Peaches -- peeled and sliced

  13. 3/4 c Sugar

  14. 2 ts Finely grated lemon zest

  15. 1/2 ts Freshly grated nutmeg

  16. 1/2 ts Ground cinnamon

  17. 3 tb Unsalted butter

  18. --FOR FINISHING--

  19. Buttermilk

  20. Sugar

  21. FOR THE DOUGH, PLACE FLOUR in a bowl and rub in butter

  22. until fine and mealy. Do not allow to become pasty.

  23. Stir in 1 cup of the buttermilk, adding the remainder

  24. if necessary. Press dough together on a floured

  25. surface, wrap in plastic wrap and allow to rest while

  26. preparing filling. Preheat the oven to 450F and set a

  27. rack in the middle level. Place the peaches in a bowl

  28. and add the remaining filling ingredients, except the

  29. butter. Toss well to combine and pour filling into a

  30. 2-quart gratin dish or other baking dish. Distribute

  31. pieces of the butter evenly on the filling. On a

  32. floured surface, with the palms of the hands, press

  33. out the dough to the size of the baking dish and slide

  34. a thin cookie sheet under it. Slide the dough onto the

  35. filling. Cut 3 or 4 vent holes in the crust with the

  36. point of a knife. Paint the top crust evenly with the

  37. buttermilk and sprinkle with sugar. Bake the cobbler

  38. about 20 minutes, until crust is well-colored and filling is bubbling. Cool slightly on a rack and serve
