  1. 1/2 cup pure maple syrup

  2. 1/4 cup packed brown sugar

  3. 50 mL

  4. 1 cup 35 % whipping Cream

  5. 1 tbsp butter, at room temperature

  6. 15 mL

  7. 4 egg yolks

  8. 4 eggs

  9. 4 cups cubed fresh white bread (about 10 slices, crusts removed)

  10. 4 cups blueberries

  11. 1 cup white chocolate chips

  12. 250 mL

  13. 3/4 cup 35% whipping Cream

  14. 175 mL

  15. 1/2 cup granulated sugar

  16. 125 mL

  17. Grated zest of 2 lemons

  18. Pinch each salt and red pepper flakes

  19. Instructions :

  20. Preheat oven to 350F (180C). Butter a 12-inch (2 1/2 L) oval glass baking dish.

  21. In a large bowl, whisk together egg yolks and eggs; gently stir in bread, blueberries, chocolate, cream, sugar, lemon zest, salt and pepper flakes. Let stand at room temperature for 15 minutes.

  22. 50 to 55 minutes or until golden and knife inserted in centre comes out clean.

  23. Serve with Maple Cream Sauce and a scoop of your favourite ice-cream.

  24. Maple Cream Sauce:

  25. 2 to 3 minutes. Slowly stir in cream; cook over medium-high heat, stirring constantly, until thick enough to coat the back of a spoon, about 5 to 7 minutes. Remove from heat and stir in butter, until melted.
