  1. CHICKEN SALAD VERONIQUE

  2. 3 cups cooked chicken cubed

  3. 1 cup seedless grape s - halved

  4. 1/2 cup almond slivers-toasted

  5. 1/2 cup celery -chopped

  6. 1/2 teaspoon celery salt

  7. 1/3 cup mayonnaise-type salad dressing

  8. 1/3 cup lemon yogurt, low fat

  9. 1 tablespoon dry white wine

  10. 1/2 teaspoon prepared mustard

  11. Frosted grape cluster

  12. Leaf lettuce FROSTED GRAPE CLUSTERS:

  13. 6 seedless green grape clusters

  14. 1 egg white, beaten

  15. 1 3 oz. pkg. lime -flavored gelatin

  1. In a medium bowl, mix chicken, halved grapes, almonds, celery, onion, and celery salt. In a small bowl, mix mayonnaise or salad dressing, yogurt, wine and mustard. Fold mayonnaise mixture into chicken mixture. Refrigerate until serving time. Before serving, prepare Frosted Grape Clusters. Arrange lettuce leaves on individual plates. Spoon chicken salad onto lettuce leaves. Garnish with Frosted Grape Clusters.

  2. FROSTED GRAPE CLUSTERS:

  3. Brush grape clusters with egg white or dip into egg white. Sprinkle with lime-flavored gelatin. Dry completely on a wire rack. Be sure to allow enough time for the coated grapes to dry.
