  1. Ravioli With Vegetables

  2. 1 cup eggplant, diced

  3. 1 teaspoon salt

  4. 1 pound fresh ravioli

  5. 3 tablespoons olive oil

  6. 2 cloves garlic, crushed

  7. 1/2 cup onion, diced

  8. 1 carrot, julienne

  9. 1/2 cup frozen broccoli, thawed

  10. 1 cup tomato, diced

  11. 1/4 cup half and half 1/4 cup spaghetti sauce

  12. 1/4 cup red wine

  13. 1 tablespoon fresh parsley

  14. 1/2 teaspoon oregano

  15. Mix eggplant and salt, place in strainer to drain for 1/2 hour

  16. while preparing rest of recipe. Cook ravioli per package. In big

  17. skillet, heat oil, garlic, and onion. Drain and wipe dry eggplant,

  18. and add to skillet. Stir-fry 4 minutes. Add carrots, tomatoes,

  19. and peas. Cook 4 minutes, add remaining ingredients. Continue to

  20. simmer while draining ravioli. Top with Parmesan.
