  7. 1 1/4 cups unflavored yogurt

  8. 1/4 teaspoon salt

  9. 10 ounces feta cheese

  10. 2 garlic cloves -- minced

  11. 1/2 teaspoon cayenne

  12. OR 3/4-teaspoon cayenne

  13. 1 teaspoon sweet paprika

  14. 1 tablespoon extra virgin olive oil -- plus

  15. 1 teaspoon extra virgin olive oil

  16. freshly ground black pepper

  17. cured black olives -- for garnish

  18. Place the yogurt in a paper towel-lined sieve and let drain for 4 hours.

  19. Combine the drained yogurt, 1/4 teaspoon salt and the feta in a bowl; mash

  20. to a smooth paste with a fork. Add the garlic, cayenne, paprika, 1

  21. tablespoon olive oil and black pepper; mix well.

  22. Alternatively, this may be prepared in a food processor.

  23. Spread the puree on a serving plate. Drizzle with the remaining teaspoon

  24. olive oil; garnish with olives.

  25. Serves 8. Serve with a hearty country-style bread.
