  8. 1/2 Small Onion, very finely chopped

  9. Fresh hot green chilies to taste about 2 chilies serranos or 1 chile jalapeno

  10. - stemmed, seeded and very finely chopped

  11. 1 Medium Tomato, cored and very finely chopped --optional

  12. 1 Clove Garlic, peeled and very finely chopped --optional

  13. 10 Sprigs Cilantro, chopped -- optional

  14. 3 Medium Avocados

  15. Salt

  16. 1/2 Lime, juiced -- optional

  17. 1. In a medium bowl, mix the finely chopped onion and chiles with the

  18. optional tomato, garlic and cilantro.

  19. 2. Halve the avocados lengthwise by cutting from the stem to flower

  20. ends, around the pits. Twist the avocado halves in opposite directions

  21. to loosen the meat from the pits, then scoop out the pits and reserve.

  22. Scrape the avocado pulp from the skins and add it to the bowl.

  23. 3. Using a spoon roughly mash the avocado while mixing in the other

  24. ingredients, making a coarse, thick mass. Flavor with salt, then

  25. enough lime juice to add a little zing, if you wish. Return the pits

  26. to the guacamole and cover with a sheet of plastic pressed directly

  27. onto the surface of the mixture. Set aside for a few minutes to let

  28. the flavors blend.

  29. Additional chopped onion and fresh cilantro, radish slices or roses,

  30. and/or a little crumbled Mexican cheese (queso fresco) or other fresh

  31. cheese like feta or farmer's cheese for garnish. - - - - - - - - - - - - - - - - - -
