  2. 1 1/4 lb Finely Chopped or Ground Skinless Salmon Fillets

  3. 3/4 cup Panko or Bread Crumbs

  4. 1/2 cup Chopped Green Onions

  5. 1/2 cup Sweet Thai Chili Sauce

  6. 1 tsp Salt , divided

  7. Vegetable Oil

  8. 1/2 cup Mayonnaise

  9. 1 1/2 - 2 Tbsp Fresh Lemon Juice , or to taste

  10. 1 tsp Minced Garlic

  11. 1/4 tsp Freshly Ground Black Pepper

  12. 4 Sesame Kaiser Rolls , split and toasted

  13. Thinly Sliced Sweet Onion

  14. Thinly Sliced Peeled & Seeded Cucumber

  15. Mixed Spring Salad Leaves

  1. Beat egg in a large bowl and combine with salmon, panko, onions, sweet chili sauce, and 3/4 tsp of the salt. Lightly coat hands with oil and form mixture into 4 patties. Refrigerate patties until ready to cook.

  2. In a small bowl, combine mayonnaise, lemon juice, garlic, pepper and remaining salt. When ready to cook, heat 2 teaspoons oil in a nonstick skillet or grill pan over medium-high heat. Add patties and cook 4-5 minutes per side until done.

  3. To assemble burgers, spread sauce on bun bottoms; top with salmon patties, onion slice, cucumber, salad leaves and additional sauce. Add bun tops and serve.
