  1. 2 tablespoons 30ml Oil

  2. 4 tablespoons 60ml Squash - summer (medium)

  3. 4 Onions - green

  4. 1 Bell peppers

  5. 1 Tomatoes (medium)

  6. 1 teaspoon 5ml Salt - garlic

  7. 1/2 teaspoon 2 1/2ml Chili powder

  8. 1 teaspoon 5ml Sugar

  1. Recipe Instructions Heat oil in large skillet. Wash, slice, and add squash. Thinly slice green onions and bell pepper and add. Cook until tender, about 15-20 minutes. Coarsely chop tomato and add to skillet with salt, chili powder, and sugar. Cook a few more minutes, just until tomatoes are soft. Serve over hot cooked rice.
