  1. 8 cups seedless watermelon - cubed

  2. 1 cup sugar

  3. 1/2 cup water

  4. 2 tablespoons lime juice lime zest to garnish

  1. Cube your watermelon and place it into your blender, food processor or use your immersion blender and blend until it’s a smooth consistency. Transfer to bowl add lime juice, stir to combine, transfer to refrigerator to chill completely.

  2. WHILE watermelon is chilling make a simple syrup by placing your water into sauce pan and cooking over high heat until water boils. Add sugar and stir constantly until sugar has dissolved. Take off of heat and allow to cool. Syrup will thicken as it cools.

  3. Add cooled simple syrup to fruit mixture. Stir well to combine.

  4. When fruit/syrup mixture is completely chilled add mixture to your ice cream maker and follow the directions for your machine. Once your sorbet has finished in the machine transfer to freezer and allow to set up until it’s add your desired texture/consistency. Garnish with fresh lime zest or mint if desired.
