  1. 1 medium Cucumber

  2. 1 cup Yogurt

  3. 1 teaspoon Sugar

  4. 1/4 cup Chopped scallions

  5. 1/4 teaspoon Cumin

  6. 1/2 cup Peeled, seeded, cubed tomato

  1. Peel cucumber. Cut lengthwise in half and scrape out center seeds 2. Cut cucumber into 1½ inch lengths. Cut into coarse shreds with a hand grater or food processor. There should be about 1 ½ cups.

  2. Combine yogurt, cucumber and remaining ingredients. Refrigerate and allow flavors to blend for an hour or more before serving.
