  1. 1 Chuck roast

  2. 1/4 cup 15g / 1/2oz Onion - finely chopped

  3. 2 teaspoons 10ml Salt

  4. 1/4 cup 59ml Chili sauce

  5. 1 tablespoon 15ml Sugar

  6. 1 tablespoon 15ml Worcestershire sauce

  7. 3 tablespoons 45ml Vegetable oil

  8. 1/2 cup 118ml Beef broth - divided

  9. 1/4 teaspoon 1 1/3ml Pepper

  10. 2 tablespoons 30ml All-purpose flour

  11. 2 tablespoons 30ml Prepared mustard

  12. 1 tablespoon 15ml Water

  13. 1/4 cup 59ml Vinegar

  1. Recipe Instructions Brown roast on all sides in hot oil in large Dutch oven or roasting pan. Pour off all but 1 tbs drippings. Add onion, 1/4 cup broth, salt and pepper. Simmer 2 1/2 hrs or until meat is tender. Combine flour, sugar, chili sauce, mustard, Worcestershire sauce and vinegar. Stir in water and pour over roast. Simmer about 30 minutes or until tender. Remove roast and stir in remaining beef broth. Simmer about 5 minutes , strain and serve with roast.
