  2. 2 1/4 cups cake flour

  3. 1 1/2 cups granulated sugar

  4. 1 tablespoon baking powder

  5. 1 teaspoon salt

  6. 1/2 cup vegetable oil

  7. 6 eggs, separated

  8. 3/4 cup cold water

  9. 2 teaspoons lemon juice

  10. 1 teaspoon grated lemon rind

  11. 1/2 teaspoon cream of tartar

  12. Frosting :

  13. 1 cup granulated sugar

  14. 3 tablespoons all-purpose flour

  15. 1/3 cup lemon juice

  16. Grated rind of 1 lemon

  17. 1 teaspoon lemon extract

  18. 4 egg yolks, beaten

  19. 1/2 cup water

  20. 3 tablespoons butter

  21. Dash of salt

  22. 1 cup coconut, optional

  1. Sift together flour, sugar, baking powder and salt.

  2. Make a well and add in order the oil, egg yolks, water, lemon juice and rind.

  3. Beat well. Add cream of tartar to egg whites and beat until very stiff.

  4. Pour egg yolks mixture gradually over the egg whites and blend thoroughly.

  5. Pour into 4 greased and floured 8 inch pans.

  6. Bake at 325 degrees F approximately 30 minutes or until top springs back when lightly touched.

  7. Frosting :

  8. Mix sugar and flour.

  9. Add lemon juice, rind and extract. Beat well.

  10. Add well beaten egg yolks.

  11. Add water, butter and salt.

  12. Cook in top of double boiler until mixture thickens. Cool.

  13. Spread on layers and sides of assembled cake.

  14. If desired, sprinkle layers and sides with coconut.
