    1. 600 g juicy, ripe tomato es (coarsely chopped)

    2. 100 g fresh bread (cut into 5 mm cubes)

    3. 4 scallion s (finely chopped)

    4. 1 tbsp tomato paste

    5. 4 tbsp butter , diced

    6. 1/3 cup brown sugar

    7. snipped chives or chopped fresh parsley to garnish

    1. * preheat the oven to 400 F/ 200 C. Put the tomatoes, bread cubes, and scallions into a baking dish and gently toss together. If the tomatoes are not bright red, stir in the tomato paste * scatter the diced butter over the surface and sprinkle with the sugar. Bake in the oven for 15 min., give the tomatoes a good stir then bake an additional 15 min.

    2. * increase the temperature to 425F/220C. Give the tomatoes a final stir and bake for an additional 10 min, or until the tomatoes are tender and the bread cubes are slightly caramelized. Sprinkle with the chives and serve hot!
