  1. 2 tbsp sunflower oil

  2. 1 large onion, chopped

  3. 2 garlic cloves, crushed

  4. 1 fresh red chilli, seeded and sliced

  5. 2 tbsp sesame seeds

  6. 500 g (1 lb 2 oz) skinless turkey breast steaks, cut into thin strips

  7. 1 1/2 tbsp mild chilli powder, or more to taste

  8. 1/2 tsp ground cloves

  9. 1 can chopped tomatoes, about 40 g (1 1/2 oz) raisins

  10. 150 ml (5 fl oz) chicken stock, preferably home-made

  11. 3 tbsp toasted flaked almonds

  12. 2 tbsp chopped fresh coriander

  13. salt and pepper

  14. sprigs of fresh coriander to garnish

  1. Heat the oil in a large wide pan over a moderately low heat. Add the onion and garlic with the sliced chilli and sesame seeds and cook, stirring frequently, for 10 minutes or until the onion is soft and golden.

  2. Add the strips of turkey and stir them briefly round the pan to mix with the onion. Sprinkle over the chilli powder and cloves, and add the canned tomatoes with their juice and the raisins. Stir well to mix.

  3. Pour in the stock. Bring to the boil, then reduce the heat to low, cover the pan and leave to simmer gently for 10 minutes.

  4. Add the almonds and chopped coriander, and mix well. Season to taste. Spoon into a serving dish, garnish with sprigs of coriander and serve immediately.
