  2. 2 tbsp. butter

  3. 3 pounds peeled, sliced onions

  4. 1/2 tsp. sugar

  5. 1 tsp

  6. 2 tbsp. all purpose flour

  7. 2 cups chicken broth

  8. 2 cups beef broth

  9. 2 tbsp. dry white wine

  10. 1 1/2 tbsp. brandy

  11. 1 1/2 tsp. dijon mustard

  12. 1 tsp. pepper

  13. 4 french bread slices, cut 1/2 inch thick and lightly toasted

  14. 4 slices swiss cheese

  1. Melt butter in a large saucepan. Add onions, sugar and pinch salt. Cover pan and cook until onions are very tender, stirring occasionally, about 20 minutes. Uncover and cook onions until golden brown, about 10 minutes. Add flour and cook 2 minutes, stirring constantly. Stir in beef and chicken broths, wine, brandy and mustard. Bring to a boil, stirring frequently. Reduce heat, cover and simmer 10 minutes. Season with 1 tsp. salt and pepper. Preheat broiler. Divide soup between 4 broilerproof bowls. Place a bread slice on top of soup and place cheese slice over bread. Broil until cheese is melted and starting to brown, about 2 to 3 minutes.
