  3. 1/2 cup Finely chopped onion

  4. 2 Teaspoons Lemon or lime juice

  5. 2 Tablespoon Chopped fresh cilantro

  6. 1 Clove garlic -- minced

  7. 1/8 Teaspoon Hot pepper sauce

  1. Pantry: Del Monte Mexican Style Stewed Tomatoes; tabasco, orpick-a-pepper, or other hot red-pepper sauceChop the tomatoes. Drain, reserving liquid. Combine the other ingredientswith the tomatoes. Taste. Add additional hot pepper sauce, if desired.

  2. Add reserved juice if needed. Makes 2 cups. Chill if desired.

  3. PAT's VARIATION 1 can Mexican style tomatoes, drained and chopped (stewedor not) 6 ounce can of Casera Sauce (Simple), canned, with liquid 1tablespoon chopped cilantro 1 tablespoon lime juice 1/4 cup prepared salsaverde, tomatilla (optional)

  4. CASERA SAUCE (MILD) 1 cup concasser of ripe tomato 1/2 cup red or whiteonions, 1/4" dice 1 tablespoon sea salt 1/2 tablespoon dried cilantroleaves red pepper flakes -- to taste Mix in glass container. Cover. Age inrefrigerator, swirling occasionally, for 7 days. Add lemon juice as neede
