  1. 4 large potatoes

  2. 8 slices of bacon

  3. 1 cup of sour cream

  4. 1/2 cup of milk

  5. 4 tbsp of butter

  6. 1/2 tsp of salt

  7. 1/2 tsp of pepper

  8. 1 cup of shredded cheddar cheese

  9. 8 green onions, chopped

  1. Instructions Preheat oven to 350 degrees F. Bake potatoes in oven for 1 hour. While potatoes are baking, place bacon in a large skillet. Cook over medium heat until evenly brown. Drain bacon and set aside to cool. Once cooled, crumble bacon. When potatoes are finished baking, remove from oven and allow to cool for approximately 10 minutes. Cut potatoes lengthwise and remove the inside, placing them into a large bowl; save skins. Add sour cream, butter, milk, salt and pepper, ½ cup of cheddar cheese, as well as half of the chopped onions, to the potatoes. Blend ingredients together with a hand mixer until creamy. Spoon mixture back into each of the potato skins. Top each potato with remaining ½ cup of cheese, green onions and crumbled bacon. Bake for an additional 15 minutes. .
