  1. 16 oz 454g Pasta - rotini

  2. Garlic clove - minced

  3. 1/3 cup 78ml Oil - olive

  4. 3 lbs 1362g / 48oz Tomatoes - peeled, seeded and 1/2 cup 20g / 0.7oz Mint leaves - fresh, chopped

  5. 1 teaspoon 5ml Salt

  6. Prepare pasta as directed on package - drain.

  1. Meanwhile, cook and stir garlic in hot oil until golden brown. Stir in tomatoes, mint and salt. Cook over low heat 5 minutes or until heated through. Serve over pasta.
