  1. 7 Potatoes, apprx.

  2. 2 lbs

  3. 1 ts Tarragon, chopped

  4. 1/4 c Onion, chopped

  5. 1/2 c White wine, dry

  6. 2 tb Shallots, chopped

  7. 1/2 c Olive oil

  8. 1/2 ts Garlic, chopped

  9. 2 tb Wine vinegar

  10. 1/4 c Parsley, chopped

  11. Pepper, freshly ground 1/4 ts Red hot pepper flakes

  12. 1. Rinse and drain the potatoes but do not peel them. Put them in a large

  13. 20 minutes, or until tender.

  14. 2. Cut the potatoes lenghwise in half. Cut each half into thin slices. 3. Put the potatoes in a bowl and add the remaining ingredients, including pepper. Stir gently.
