  1. Frijoles Refritos- Refried Beans

  2. 500 grams dried pinto or pink beans

  3. 5 cups water to cook,

  4. 10 cups for overnight soaking

  5. 1 or 2 onions diced

  6. 1/2 to 1 cup hot bacon drippings, butter, margarine or lard

  7. Wash and drain beans. Combine beans in a large pot with water and onions. Soak overnight or bring to the boil, cover and let cool

  8. for 1 hour. Return to heat, bring to boil, cover and simmer till

  9. 3 hours

  10. masher, adding bacon drippings or butter etc. Mix well and continue

  11. cooking and stirring till beans are thickened and fat is absorbed.

  12. Add salt to taste. Serve hot. Recipe keeps well when refrigerated.
