  1. 16 oz. macaroni

  2. 3 Tbsp. margarine

  3. 2 Tbsp. all-purpose flour

  4. 1/2 tsp. salt

  5. 1/8 tsp. pepper

  6. 1/2 tsp. paprika

  7. 1 1/2 tsp. prepared mustard

  8. 2 1/4 c. 2% milk or skim milk

  9. 2/3 lb. lowfat sharp cheddar cheese (4 c.) grated

  1. Preparation : Macaroni should be prepared according to package directions. Spray 2-qt. baking dish with Pam and set aside. Transfer cooked macaroni to prepared dish. In medium saucepan, melt margarine. Stir in flour, salt, pepper, paprika and mustard. Cook, stirring constatly, for 2 to 3 minutes. Gradually stir in milk and continue stirring until mixture thickens slightly. Add cheese and stir until melted. Stir cheese mixture into macaroni. Bake at 375 F for about 20 minutes, or until lightly golden.
