  1. Sauerkraut Salad

  2. Yield: 10-12 servings

  3. 16 oz can or jar of sauerkraut, drained

  4. 1 cup grated carrots

  5. 1 cup chopped celery

  6. 1 cup chopped green pepper

  7. 1 cup chopped onion

  8. 4 oz jar pimentos, drained

  9. 3/4 cup sugar

  10. 1/2 cup oil

  11. In large bowl, mix first 6 ingredients. In small bowl, mix sugar

  12. and oil; pour over vegetables and mix well. Cover and refrigerate

  13. for at least 8 hours.
