  6. 6 lb Chicken

  7. 2 Medium onions, sliced

  8. 4 Ribs celery, chopped

  9. 2 Carrots, cut into chunks

  10. 4 Sprigs parsley

  11. 1 t Salt

  12. 1/4 ts White pepper

  13. 3 tb Soy sauce

  14. 1 1/2 tb Dry sherry

  15. 1 1/2 ts Ginger juice

  16. 1 1/2 ts Sesame oil

  17. Diced tofu

  18. Cooked soft Chinese noodles

  19. Sliced green onions

  20. Sliced fresh mushrooms

  21. Sliced water chestnuts

  22. Celery, cut 1-in.-long

  23. Red bell peppers

  24. Cilantro leaves

  25. Place chickens in large, heavy pot. Add 2 quarts

  26. water, onions, chopped celery, carrots, parsley, salt

  27. and white pepper and bring to boil. Skim off any scum

  28. that rises to top. Cover, reduce heat and simmer 1 1/2

  29. to 2 hours or until chickens are very tender. Remove

  30. chickens from pot and set aside. Strain broth. There

  31. should be about 7 cups. Return broth to pot and add

  32. soy sauce, sherry, ginger juice and sesame oil. Strip

  33. chicken from bones and dice. Add to broth and bring

  34. once more to boil. Place in chafing dish over heating

  35. unit and keep it at simmer. Arrange tofu, noodles,

  36. green onions, mushrooms, water chestnuts, julienned

  37. celery, red peppers and cilantro leaves in bowls

  38. around chafing dish. Ladle broth into bowls and let

  39. guests add ingredients of their choice. (Keep broth

  40. very hot, as addition of extra ingredients will cool
