  2. Meringue Pecan Pie

  8. 1 C Sugar

  9. 1/2 Tsp Baking Powder

  10. 1 Tsp Vanilla

  11. 20 Ritz Crackers

  12. 1/2 C Pecans -- chopped

  15. Fresh Fruit <Or>

  16. Whipped Cream

  17. Beat egg whites until very stiff; slowly add sugar, baking powder, and vanilla. Break the crackers into pieces about the size of a pea, and stir

  18. by hand into the meringue mixture. Add the pecans. Pour into a

  19. well-buttered 9 pie pan. Be sure to butter the edge and rim of the pan.

  20. 350 for 25 minutes. Serve with ice cream or fresh fruit and whipped cream.
