  1. Vegan Mozzarella Cheese

  2. 1 cup water

  3. 2 small cloves roasted garlic

  4. 2 T fresh lemon juice

  5. 1 - 2 T tahini

  6. 1/4 cup nutritional yeast

  7. 3 T quick-cooking rolled oats

  8. 1 T arrowroot or cornstarch

  9. 1/8 t dry mustard

  10. 1 1/2 t onion powder

  11. 1/2 t salt, or salt-free seasoning

  12. Place all ingredients in a food processor or blender, and process

  13. until completely smooth. Pour into a small saucepan and cook over

  14. medium heat, stirring constantly, until smooth and thick.

  15. Cook the sauce until you reach the consistency you want - it will

  16. thicken right up to a spread if you let it. If you're going to

  17. have it sit while you assemble the pizza, stop cooking when it's

  18. a little on the thin side and cover the pot. It thickens as it

  19. cools.
