  2. 1/2 pound shrimp -- minced

  3. 1/4 cup Shao Hsing wine -- (or sherry)

  4. 1/2 pound bean sprouts or 1/2 pound Chinese cabbage -- (or combo),

  5. -- shredded 12 green onions -- finely chopped

  6. 2 tablespoons ginger root -- finely chopped

  1. Mix all ingredients and let stand in refrigerator at least 2 hours.

  2. Make dough using the Dim Sum Dumpling Dough (Boiling Water Method) recipe. Or buy dumpling or wan ton skins.

  3. Place about 1 teaspoon of filling in the center of each dumpling. Fold up so the top is uncovered.

  4. Steam for 10-12 minutes.

  5. Serve with your favorite dipping sauce.
