  1. Creamed Spinach

  2. 3 tablespoons margarine/butter

  3. 3 tablespoons flour

  4. 2 cups milk

  5. 1/2 cup (or more) Parmesean or Romano cheese, grated

  6. 1 small onion, diced fine

  7. 2 to 4 cloves garlic, smashed

  8. 1 to 2 tablespoons butter

  9. 2 packages frozen chopped spinach thawed and squeezed

  10. Make a basic white (Bechamel) sauce. In a large pot cook butter

  11. and flour for a few minutes to cook the flour and make a roux.

  12. Add 2 milk and cook until thick. Add more milk to adjust it to

  13. the creaminess you like. To this add grated cheese.

  14. In another pot saute onion, garlic, butter and spinach. Cook this

  15. about 10 or so minutes until the spinach is hot and onion is clear.

  16. Add the above white sauce and mix thouroughly. Salt and pepper to

  17. taste after its all combined.

  18. Sprinkle the top with some buttered crumbs if desired.
