  2. MAGIC LEMON PIE (CRS)

  6. Lemon filling:

  7. 15 oz Milk -- sweetened condensed

  8. 1/2 c Lemon juice

  9. 1 t Lemon zest

  10. 2 Egg yolks

  11. Meringue:

  12. 2 Egg whites

  13. 1/4 ts Cream of tartar

  14. 4 tb Sugar

  15. Graham cracker crust:

  16. 18 Graham cracker squares

  17. 1/4 lb Butter or margarine,

  18. 1/3 c Sugar

  19. 1/8 ts Cinnamon

  20. Thoroughly mix crust ingredients and pack into a nine

  21. 375 degrees for 10 minutes and put aside to cool. Reduce oven temperature to 325

  22. degrees. In a mixing bowl, combine condensed milk,

  23. lemon juice, lemon zest and egg yolks. Stir until

  24. mixture thickens. Pour into cooled crust. Add cream

  25. of tartar to the egg whites and beat until almost

  26. stiff. Add sugar gradually, beating until stiff and glossy but not dry. Pile lightly on pie filling. Bake

  27. 325 until lightly browned, about 15 minutes. Cool

  28. thoroughly. Enjoy! Hint: try to get the crust
