  2. 3/4 tsp. kosher salt

  3. 1/8 tsp. cayenne pepper

  4. 1/8 tsp. paprika

  5. 1/8 tsp. ground coriander seed

  6. vegetable oil for frying

  7. 2 medium russet potatoes, cut lengthwise into 1/4 inch thick fries

  1. Stir together salt, cayenne, paprika and coriander in a large bowl. Heat oil to 325 degrees in a deep fryer or deep skillet. Add the fries to the oil and fry 1 1/2 minutes. Transfer the fries to paper towels. Increase oil to 350 degrees. Return potatoes to the oil and fry about 5 minutes until golden and crisp, turning occasionally. Drain fries on paper towels. Transfer fries to the bowl with the spice mixture and toss to coat. Serve fries hot.
