  1. 3 lbs 1362g / 48oz Ripe mangoes (medium)

  2. 1 cup 160g / 5.6oz Brown sugar

  3. 1 cup 237ml Water

  4. 1/2 teaspoon 2 1/2ml Cinnamon

  5. 1 teaspoon 5ml Vanilla extract

  6. 2 cups 474ml Vanilla ice cream

  1. Bring water and brown sugar to a boil, add flavorings and simmer for 5 minutes.

  2. Peel and slice mangoes and add to mixture. Simmer for 10 minutes more or until tender.

  3. Cool serve with vanilla ice cream and-or whipped cream.
